Lactobacillus acidophilus is a homofermentative, microaerophilic species, fermenting sugars into lactic acid, and grows readily at rather low pH values (below pH 5.0) and has an optimum growth temperature of around 37℃. It can grow in both oxygen-residual or anaerobic conditions, can grow better at aerobic conditions, and can even survive in Nitrogen Dioxide conditions. Its metabolism can digest monosaccharides, and it also creates lactase — an enzyme that converts lactose (milk sugar) into a simple sugar.
